Pea soup with Bacon

one of my favorite easy meals is pea soup, which I make it by using saute sweet onion in fat smokey bacon and then by adding peas from the freezer.

INGREDIENTS

1/4 cup diced bacon

1/2 cup diced sweet onion

1 clove minced garlic

2 1/2 cups unsalted vegetable stock/chicken stock

4 cups frozen peas

1 tsp black pepper

salt to taste.


PREPARATION

step1

place sauce pan over low heat, and add diced bacon, stir occasionally, let it cook until bacon crispy, take crispy bacon out put on the plate keep the bacon fat on the pan.


step 2

using the same sauce pan over medium-low, and add diced onion stir onion for 4 minutes then add minced garlic stir for 2 minutes. then add frozen peas.


step 3

add 2 1/2 cups unsalted vegetable stock/chicken stock, cover, and bring into boil for 2 minutes,then let it simmer until peas are tender about 10 to 12 minutes. Remove from heat, and allow to cool until no longer steaming.


step 4

transfer soup to a blender or using hand blender,add black pepper and salt, and puree until mixture is very smooth. serve immediately with crispy bacon.
