Sarabba Drink



Sarabba drink is typical drink from south Sulawesi, made from ginger, lemon grass,white pepper, palm sugar, coconut milk, it taste sweet and savory, it little thick and its good for cold rainy weather , my family In indonesia we always made sarabba around new years eve, I remember in the afternoon my brother will go climb the coconut tree then he will bring us coconut fruits, then me and my sisters will make coconut milk and harvest ginger, lemon grass from my moms garden, and then in the evening we will use the coconut milk, ginger, lemon grass and palm sugar from the local farmer to make Sarabba drink, while my dad and my brother griling corn and fish we all gather together enjoying drinking Sarabba drink to welcome the new year, in our traditions we believe that when we drink Sarabba Drink in new years eve, the new year will bring us sweet and healthy good year!


Its almost new year and I want to share recipe for this Sarabba drink and using some of the ingredients from north east such as maple syrup that taste almost similar like palm sugar, and im grateful that I still can found lemon grass and ginger in grocery store, whenever i want to make my hometown food. I also tried grow some ginger and lemon grass in my garden but it didn't last me until winter because the season for growing is very short.



Sarabba Drink

cook time :30 minutes

serve : 3 cups

Ingreidents :

2 inch ginger root (peel and grated)

2 1/2 cup water

3 inch lemon grass (chopped)

1 stick cinnamon

1/4tsp black pepper (ground)

1/2 cup Grade A dark maple syrup

13,66 Fl oz unsweetened coconut milk

5 tbsp rum (optional)


cook :

In medium sauce pan add water, lemon grass, ginger, black pepper, cinnamon, bring into boil medium heat for 2 minutes


In low heat continue simmer for 20 minutes , then add maple syrup bring it to boil for 4 minutes


Add coconut milk continue cooking medium low heat keep stirring for 5 minutes (don't let the coconut milk over boil), turn of the heat. strain sarabba drink to remove all the spices, and add rum if you like.


serve sarabba drink warm and enjoy! Happy New Year!
